4 large sliced mushrooms
1 tablespoon butter
1/2 cup all-purpose flour
4 cups shredded monterey jack cheese
1 cup crumbled pork or turkey sausage (fully cooked & drained)
2 cups shredded cheddar cheese
4 chopped green onions
1/2 cup butter
10 eggs, lightly beaten
In a skillet, saute the mushrooms and onions in 1 tablespoon butter until tender. Set aside.
In same skillet brown and crumble the sausage. Drain well on paper towels.
In a large bowl, combine the flour, baking powder and salt.
In another bowl, combine eggs and cheeses.
Melt remaining butter; add to egg mixture. Stir into dry ingredients along with sausage crumbles and mushroom mixture.
Fill greased muffin cups three-fourths full.
Bake at 350 degrees for 35-40 minutes or until a knife inserted near the center comes out clean.
Carefully run a knife around the edge of each muffin cup before removing.
Downtown Norfolk gets all gussied up for the holidays on November 22. Carrying on a tradition that the city began exactly three decades ago, the 30th Annual Grand Illumination Parade will kick off at 7 p.m. on Saturday the 22, and you can expect it to unfold rain or shine.
As always, the Illumination Parade is free for the public, so bring the whole family along. Adults and children alike will probably be stunned by the inaugural event: the illumination of Norfolk's skyline. After the city buzzes to life, floats begin to roll through downtown streets. The massive, splashy floats are interspersed between dancing troops, gigantic holiday balloons, and even a sleigh-driving Santa Claus. What's more, the Illumination Parade is just a short trip from Northwest, making it easy to see it for yourself!
